Figs and Marscarpone with Honey


 Figs are in season! I had never tasted a fig until recently. Our family has been eating clean for months now and that means cutting out a LOT of treats. Well I had a craving so here is what I threw together. Truth be told the kids were not huge fans but it worked for my husband and I.

This is the type of organic honey our family loves. It's called Organic Hawaiian Honey 'Ohi'a Lehua Blossom by The Big Island Bee Company.

  1. I first cut the stem off and then cut the figs in half. 
  2. Bake at 400 degrees for about 15 to 20 minutes
  3. Melt about 8oz. organic marscarpone cheese with about a tbsp. of honey. Low heat or the cheese will separate. Stir often. 
  4. Cheese mixture over the figs. Save the juices and top over the cheese. That's it!

Now is this the best recipe ever? Not really, but it's quick, easy and all natural which is exactly the way I like to cook.

  1. Yum. Are figs in season right now? I never see them at any of the grocery stores I go to.

    I never see them in my grocery stores either but Costco had them (so now I'm well stocked..lol). I understand that their season is early summer and then again late summer. I'd like to try them wrapped in prosciutto next. Thanks for leaving a comment:)
